THE JOB:
The primary responsibility of the Executive Chef, Banquets and Conventions at Park MGM is to oversee all kitchen operations for large-scale events, ensuring exceptional food quality and presentation. This role involves managing banquet and catering services, from menu creation to the execution of events, while maintaining compliance with health regulations and ensuring a seamless guest experience. The Executive Chef also collaborates with the culinary team and event management to ensure efficiency, manage costs, and continuously elevate service standards.
THE DAY TO DAY:
- Oversee daily kitchen operations to ensure exceptional guest experiences.
- Manage Human Resources tasks, including team performance feedback, recognition, and hiring while ensuring compliance with company policies and legal requirements.
- Review daily Banquet Event Orders (BEOs), Special Event Orders (SEOs), and Meeting Event Orders (MEOs) to ensure accurate event setups.
- Ensure standards for food presentation, quality, and timing are met for all events.
- Manage labor, food costs, and inventory to ensure efficient kitchen operations.
- Work with the culinary team to maintain menu standards and streamline purchasing and receiving processes.
- Ensure compliance with health and safety regulations, including local and federal food service laws.
- Provide input on menu development and assist in creating new dishes alongside the property Executive Team.
- Communicate with staff, management, and guests to maintain smooth operations.
- Address guest feedback and complaints promptly to maintain high service standards.
- Oversee payroll management, shift opening/closing duties, and daily reporting.
- Monitor guest service delivery, ensuring alignment with the company's core service standards.
THE IDEAL CANDIDATE:
- Must be at least 21 years of age
- Must be currently hold or be able to obtain a Food Handlers card and a ServSafe Certificate
- 2+ years of experience working in banquets or conventions in the food and beverage industry
- 2+ years of experience in a kitchen leadership role in a high-volume environment
- Previous experience managing employees under a collective bargaining agreement
- Bachelor's degree or equivalent experience
