Culinary Supervisor
Job Summary The Culinary Supervisor overall responsibility to supervise food preparation of all patient and retail food. This position directs culinary and retail production by providing production work sheets for culinary staff, establishing, monitoring and documenting food temperatures, temperature monitoring of refrigerator and freezers. This person establishes and monitors food quality standards to ensure consistency and highest quality standards for UCSF Medical Center. The final salary and offer components are subject to additional approvals based on UC policy.
This position participates in department projects, solves problems related to the culinary services unit. The incumbent is expected to teach, train and develop culinary services staff including dietetic interns and culinary student externs. This position requires flexibility to orient and work at all UCSF Medical Center locations. Your placement within the salary range is dependent on a number of factors including your work experience and internal equity within this position classification at UCSF. For positions that are represented by a labor union, placement within the salary range will be guided by the rules in the collective bargaining agreement. The salary range for this position is $83,938 - $94,418 (Annual Rate). Required Qualifications
- Associate Degree in culinary arts or four years' experience in food production management.
- Working knowledge in food service and sanitation regulations.
- Working verbal and written communication skills in the English language, including active listening, dynamic flexibility, critical thinking, and ability to multi-task and ensure productive time management.
- Working knowledge to make appropriate decisions, reasoning skills, ability to develop original ideas to solve problems, and conduct basic operations analysis and quality control analysis.
- Working skills to provide effective interpersonal and work supervision guidance to other personnel and work effectively with partners on joint projects.
- Intermediate computer application skills to include food service applications such as point of sale and inventory control software.
- Basic mathematical and cash control skills to accurately complete drawer counts and prepare deposits.
- At least one year experience of work with clients and customers in food service.
- At least 1 year of supervisory experience in a hospital or other health care facility kitchen.
- Proficient in word processing, presentation, and spreadsheet software programs such as Microsoft Word and Excel.
- Experience in regulations for food safety and HACCP.
- Experience in training and developing culinary and other production staff.
- Proficient with word or excel and use of computer systems i.e. Computrition, HBS.
- Experience working effectively with clients, customers, and support staff.
Preferred Qualifications
- Bachelor's degree in culinary arts, hospitality management, nutrition, or related field.
- Two to four years supervisory experience preferably in a hospital or other health care facility kitchen.
- Experience in the research, development and implementation of new food products that anticipate and are responsive to multi-cultural patient and retail customers' desired food experience.
- Knowledge in the areas of local health department regulations includes food safety, HACCP, OSHA and other regulatory agencies.
- Previous food industry procurement experience.
- Experience using and maintaining Computrition or similar food service database software.
- Experience teaching dietetic interns or other students.
- Knowledge of sustainability practices in food service.
- Five to seven years culinary experience including experience in the healthcare foodservice industry.
- Experience in working with Title 22 and The Joint Commission
- Experience in food plating and presentation.
- Experience managing in a unionized environment.
- Experience with Computrition, CBORD, or other food and nutrition computerized food production programs.
License/Certification
- ServSafe Certification or equivalent food protection manager certification. If valid certification is not at time of hire, it must be obtained within 6 months of start date.
